Glenn Meadow Recipe Favorites: Egg Cup Delight!

At Glenn Meadow Bed & Breakfast, I love creating a memorable experience for my guests, and it’s often the little touches, like a homemade breakfast, that truly make a stay special. I find so much joy in seeing my guests start their day with a smile, and these delightful egg cups are my go-to recipe for making that happen.

I love this recipe because it’s so versatile and always a crowd-pleaser. Plus, it looks so inviting on the breakfast table!

And it’s surprisingly easy to make and can be customized to suit any taste. Here’s how you can bring a little bit of the Glenn Meadow magic to your own kitchen.

Glenn Meadow B&B’s Quick Egg Cups

Ingredients:

  • Non-stick cooking spray (PAM)
  • 3 large flour tortillas (or 2 slices of deli ham for gluten-free)
  • Small cube of cream cheese
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 pepper, diced
  • Salt and pepper to taste
  • ½ cup fresh chopped basil
  • Diced feta cheese
  • Shredded mozzarella cheese
  • 8 large eggs
  • ½ cup heavy cream

Instructions:

Preheat the oven to 350°F (175°C). Liberally spray a muffin tin with non-stick cooking spray.

  1. If using tortillas: Cut them into quarters and push one quarter into the bottom of each muffin cup, forming a small nest.
  2. If making it gluten-free: Line each muffin cup with a slice of deli ham instead of the tortillas.
  3. Place a small cube of cream cheese in the bottom of each cup. In a skillet, sauté the diced onion and pepper in olive oil until softened, then season with salt and pepper. Stir in the chopped fresh basil.
  4. Spoon the vegetable mixture evenly over the cream cheese in each muffin cup, then sprinkle diced feta and shredded mozzarella cheese over the vegetables.
  5. In a separate bowl, whisk together the eggs and heavy cream. Carefully ladle the egg mixture evenly over the vegetables and cheese in each muffin cup.
  6. Bake in the preheated oven for 20-25 minutes, or until puffy and beginning to turn golden brown. Once cooked, gently remove them from the muffin tin and arrange on a platter to serve.

These delightful egg cups are perfect for a weekend brunch, a light lunch, or even a make-ahead breakfast. The combination of creamy cheese, savory vegetables, and fluffy eggs is simply irresistible!
